Mushroom and Caramelised Onion Mille Feuille

This is the second one in the series "Savoury twist on classic desserts" where I pick one, most loved dessert and put a savoury spin on it.


Mille Feuille - also known in some places as Napoleon slice, is a simple dessert made from puff pastry sheets and cream. This one here isn't just a twist on a classic dessert, but also a recipe which is 100% meant for my posterity :D Anyone and everyone whom I have hosted at home, has had a version of this.


Store-bought pastry sheets are the biggest cheat code in this recipe and trust me, they save time and work like a charm. The flavours are simple - Charred Mushrooms + Butter + Caramelised Onions. Your first bite gives you a solid thundering crunch, slowly leading you onto the soft texture of the filling, releasing all the flavours.



On days of impatience and sudden requests, these are made by cutting a square of the pastry sheet, piping the filling on top and then closing it with another sheet layered on top, sides forked down to seal. However, this version here demands a different technique. The sheets are cut and compressed using weights and then baked, which makes them flaky and extraaa-crunchy.





Snack on them, binge on them or use them to earn brownie points for hosting the best brunch. This one's a keeper!
