Pavlova | Dark chocolate mousse | White chocolate mousse | Cherries

Light as air, feels like eating a ball of cloud - Pavlovas!


By themselves, Pavlovas are the best quick fix to satisfy a sweet tooth. Take a bite and you're cured. But, there's so much we can do to oomph up the flavour of a classic pavlova. In my attempt here, I've used chocolate as a base flavour and built on it.


We have mousse done two ways, rich dark chocolate and airy white chocolate. Pavlovas add the right crunch which quickly melts like candy.


To add a flavour contrast, I've used a salted tuile, that compliments the sweetness from all other elements.


Pro tip : Use a clean bowl (read SPARKLING clean!) to make your meringue base for your pavlovas, it yields prefect results. Also, as a thumb rule, pick the BEST ingredients.
