My favourite time of the year is when we cross the last leg of October, and slide into the magnificent winter, which brings its goodness in the form of STRAWBERRIES!
And so, I had to make the most of it. This is a deconstructed version of the very famous Eton mess, with all elements spread on a plate.
The vanilla sponge is as light as air (look at the corals!) and sans any use of foaming technique (espuma gun). I skipped the meringue here which goes in the traditional recipe, and used fresh whipped cream instead.
This dessert is light on the palate and has distinct sweet and sour notes. The correct way to eat this would be to scoop all elements into your spoon and savour the bliss!
